Onions can be made into a delicious stir fry without the addition of any veggies.One of the best accompaniment for curd rice.Usually in villages people have raw onions with Pazhaya soru but in my native place Virudhunagar we used to saute these shallots and have with curd rice or pazhaya soru.These are super natural coolant foods especially to be in places like Chennai where most of the months are extremely hot.
During summer I serve these shallots stir fry for breakfast and not for lunch .My family love to have them in the morning along with pickles,papads and mor milagai.But whatever be the side dish nothing can beat the taste of shallots stir fry.
PREPARATION TIME : 20 MINS
COOKING TIME : 3 MINS
SERVES : 2
INGREDIENTS
25 shallots (small onions)(chopped)
3 green chilies (chopped)
1/2 tsp mustard seeds
1/2 tsp urad dhal
1/8 tsp turmeric powder
1 tbsp oil
3 tsp buttermilk
A sprig of curry leaves
Salt to taste
METHOD
Heat oil in a pan,add mustard seeds,urad dhal,curry leaves and green leaves.
When they splutter add the chopped onions and saute for 3 mins on medium flame stirring continuously.
Finally add buttermilk,turmeric powder,salt and mix well.Switch off the flame.
Serve them with curd rice or pazhaya soru.

This looks so delicious Swapna! I absolutely love shallots and use them as much as possible. I would have never thought of stir frying them. I bet they are so sweet and flavorful. Great recipe 🙂
