Make sure to buy good quality jaggery to get perfect kadalai mittai.It is very important to shape them when it is hot.So you can dust your hands with rice flour instead of greasing them with ghee.Ghee gives a glossy look but rice flour reduces the heat and makes shaping easy.

INGREDIENTS

1 cup peanuts

3/4 cups crushed jaggery

1/4 cup water

1/2 tsp cardamom powder

Roast the peanuts in a pan for 3 mins in medium flame and remove the outer skin.

Bring a cup of jaggery with 1/4 cup water to boil.Filter it once it gets dissloved.

Bring it to boil again,add cardamom powder and reduce the flame to medium.

Let it boil in medium flame until it becomes thick.

Check the consistency by dropping the syrup in water.When it reaches a soft ball consistency, switch off the flame.

Switch off the flame ,add the peanuts and mix well.

Grease your hands with ghee or dust with rice flour and start making small balls.

TAKE CARE TIPS

Use good quality jaggery ,do not use paggu vellam.

You can use a pinch of sukku powder for the flavour.

If it becomes hard while shaping ,you can keep them in flame for few seconds and start shaping.

Do not cook the peanuts for a long time after adding to the jaggery else they will become chewy and lose their crunchiness.
