Pav Bhaji is one of the most popular street snack in Mumbai.Bhaji is spicy gravy with lot of veggies and spice powder that is served with Pav (Indian Bun).Pav is toasted in tawa with butter and served with bhaji,chopped onions and lemon wedges.The veggies need to be cooked well and mashed for a creamy consistency for the bhaji.For making Pav Bhaji butter is used for oil.Butter adds nice flavour and enhances the taste of both Pav and Bhaji.You can also add other veggies to make it more healthy and delicious.Such a filling evening snack that could also be served for any meal for a change.

SERVES : 3
INGREDIENTS
2 medium sized potatoes
2 carrots
10 french beans
10 cauliflower florets
2 onions (chopped)
2 tomatoes (chopped)
1/2 capsicum (chopped)
1/2 tsp turmeric powder
2 tsp red chilly powder
1 1/2 tsp coriander powder
1 tsp cumin powder
1 tsp pav bhaji masala powder
2 tsp ginger garlic paste
1 tsp lemon juice
1/4 tsp kasthuri methi (optional)
1 tbsp coriander leaves (chopped)
8 Pav buns
Salt to taste
Butter as required
METHOD
Pressure cauliflower,carrots,beans and potatoes for 3-5 whistles with salt and 3/4 cup water.
Heat 2 tbsp butter,add ginger garlic paste ,onions and saute for 2 mins.Then add capsicum and saute for 2 mins.Finally add tomatoes and saute until mushy.
Add the salt, pav bhaji masala, chilli powder,coriander powder,cumin powder,turmeric powder and cook for another 4 minutes.
Then add the vegetable stock,mash and add the veggies to the sauteed gravy ,add more water (1 cup) and cook for 15 mins.Switch off the stove a,add lemon juice,kasthuri methi and garnish with coriander leaves
Heat a tawa with butter,cut the pavs into halves (horizontally).Shallow fry both sides until mild brown in colour.
Serve hot with some chopped onions and lemon wedges.
