Butter beans are important sources of plant protiens and are also rich sources of antioxiants,vitamins,minerals and plant sterols.These speckled beans were new to our market place,so bought them from the local farmers.I followed the same recipe as i do for white butter beans and these beans tastes really good.
50 grams speckled butter beans
1 onion chopped
1 green chilli chopped or slit
1 tsp ginger garlic paste
1/4 tsp turmeric powder
2 tsp oil
Salt to taste
1 tsp grated coconut
1 green chillies
1/2 tsp cumin powder
Heat oil in a cooker,add the mustard seeds and urad dal.When they splutter add the green chillies,onions,giner garlic paste and saute for a minute.
Add the items under ‘to grind’,turmeric powder,salt and cook for a minute in low flame.
Now add 1/4 cup water,speckled beans and cook for three whistles.Open the lid when the pressure is released by itself.
Serve with steamed rice and sambar
