Sevai/Idiyappam is made from rice flour,its a zero oil recipe as they are steamed.Many dishes are made using sevai,they are quick and easy to make recipes.Whenever i make Idiyappams at home,i make few extras to make sevai variety recipe the same day for lunch.You can use the store bought idiyappams or make them at home.Click here for Idiyappam recipe.
INGREDIENTS
2 cups sevai / 4 idiyappams
1 carrot chopped
1 tbsp peas (cooked)
1 onion chopped
1 tomato chopped
2 tsp lemon juice (optional)
2 green chillies slit
1/2 tsp ginger garlic paste
1 tbsp coriander leaves chopped(garnishing)
1/2 tsp turmeric powder
1/2 tsp chilli powder
1/2 tsp salt
TO TEMPER
2 small cinnamon stick
2 cloves
2 star anise
1 cardamom
1 bay leaf
1/2 fennel seeds
METHOD
Heat oil in a pan,add the items under ‘to temper’,when they splutter add the ginger garlic paste,onions,tomatoes,green chillies and saute for 2 mins on medium flame.
Add the carrots,peas and saute for 2 mins on medium flame.
Add turmeric powder,chilli powder,salt and mix well.
Now add the sevai to the veggies.
Add the coriander leaves,lemon juice(optional) and mix them well.
Serve the Masala sevai hot with onion raitha.
TAKE CARE TIPS
Do not over cook the vegetables.
Add little salt to the veggies for the idiyappams already has some salt.
If you do not like the lemon taste just omit them.
You can also add half a teaspoon of garam masala powder to this sevai.
