Potato chips are plain,simple and delicious snack that could be easily done at home.With just few ingredients you can make super thin,crispy chips.Unlike the store bought one has a long list of ingredients such as artificial colours,emulsifiers,preservatives and taste enhancers.Homemade chips are crackling crisp and has a pure flavor from the real fresh potatoes.So you don’t have to waste money on fancy chips anymore.For a delightful twist you can add barbeque sesaoning,italian herbs,sweet paprika,tajin or anything that your taste buds are craving for.I have seasoned them with just salt and chilli powder with some curry leaves and cashews to make it more like a South Indian snack.These chips are perfect for lunch box snacks,picnic baskets and for parties.
PREPARATION TIME : 45 MINS
MAKING TIME : 30 MINS
INGREDIENTS
3 medium sized potatoes
5 cashews (broken)
A sprig of curry leaves
Chilli powder as required (1 tsp)
Salt to taste
Oil for frying
METHOD
Wash and peel the potatoes.
Slice potatoes to 2 mm rounds ,arrange them one and chop thinly using a sharp knife.
Soak them in a bowl with salt water for 30 mins.Alternatively wash them under running water 4-5 times until starch is removed.Drain and pat completely dry.
Heat oil in a kadai,fry the chips until golden and bubbling subsides.Fry in small batches to prevent the chips from sticking together.
Remove the excess oil using a kitchen paper.
Reserve the chips in an airtight container until needed.
TAKE CARE TIPS
You can adjust the thickness as per your need.
Feel free to adjust the spices in the recipe to your taste.
For crispy chips slice thinly.
