Sweet Ammini Kozhukatai

An easy kozhukatai where the rice flour is made into seedai shaped small balls and then tossed with jaggery and some grated coconut that makes it so delicious and perfect for Chathurthi.You should also try the Spicy version Kara Ammini Kozhukatai,usually we make these ammini kozhukatai when we have left over kozhukatai dough after making Thengai Pooranam Kozhukatai or Kadalai Paruppu Pooranam Kozhukatai.A zero sugar and zero oil sweet delicacy that one could enjoy without any guilt. Do try this kozhukatai at home and have a wonderful celebration with your family and friends.

SERVES : 2

INGREDIENTS

1/2 cup rice flour

1/2 cup jaggery

1/4 cup coconut

1/2 tsp cardamom powder

Salt to taste

Water as required

METHOD

Mix flour and salt together.Bring water to boil and add it to the flour to form a soft smooth dough.

Make small seedai shaped balls out of the dough.

Steam these small balls for 10 mins.

In a pan add jaggery with 1/4 cup of water and bring it to boil .When it boils simmer to low flame and cook for 2 mins.Strain them through a metal strainer.

Now add them the filtered jaggery syrup to a pan,add coconut,cardamom powder and cook for 5 mins or until the jaggery becomes thick like honey.

Now add the steamed balls and mix them gently.

Sweet Ammini Kozhukatai is ready now.
