Tomato Soup / Thakkali Soup

PREPARATION TIME: 5 MINS

COOKING TIME : 30 MINS

SERVES : 2

INGREDIENTS

4 medium sized tomatoes

1 onion

1/2 carrot(optional,just for color)

1 small piece of beetroot(optional,just for color)

2 cloves of garlic

1 bay leaf

1 tsp italian herbs

1/2 tsp pepper

1 tsp sugar

2 tsp corn flour

1 tbsp butter

Salt to taste

Water as required

METHOD

Heat butter in a dutch oven or soup pot,add garlic ,bay leaf and daute fir a minute on low flame.

Then add carrot,beetroot,onions and saute for a minute on low flame.

Add the chopped tomatoes and saute for 2 mins on low flame.

Add 1/4 cup water and cook for 5 mins on low flame with a closed lid.

Switch off the flame and let it cool.Discard the bay leaf, transfer to a mixie and grind it to smooth paste.

Strain the mixture.

Mix 2 tsp of corn flour in 2 tbsp of water and keep it aside.

Add the strained tomato puree back into the dutch oven and bring it to boil.When it starts to boil, reduce the flame to low .
Add pepper,italian herbs,salt ,sugar and the corn flour mixture.

Let it cook for 5 mins on low flame.Serve them warm with croutons.

Rich and creamy soup ready to serve.
