Peanut Burfi / Verkadalai burfi(with sugar)

Kadalai Mittai is a high protein delicacy prepared in 2 minutes with just 2 main ingredients peanuts and sugar.Peanuts provide good energy for growing children,you can also try them with jaggery for a healthier version.Kadalai mittai and kadalai urundai are the two recipes i made long with jaggery as a sweetening agent.You can also roast the peanuts in a pan for 3-5 mins on low flame to make them more crunchy in the burfi.
Only thing to concentrate is the sugar caramelization ,once you learn the trick it is very easy to make at home and you won’t buy them from the stores.An easy and simple recipe that could be made in huge batches for a group of people and can be stored in air tight container for a month.Do make this healthy kadalai burfi for your loved ones at home.




1 cup peanuts

3/4 cup sugar


Dry roast the peanuts ,remove the skin,grind to coarse powdef and keep it aside.

Heat a wide bottomed pan, add sugar and let the flame be low.Just heat it without any water.Sugar starts to caramelise ,it is a type of non-enzymatic browning reaction .Switch off the flame now.

Immediately add the coarsely ground peanuts,just give a quick mix and transfer it to a greased plate.
You cannot cut them into squares, just drawn lines over them with a very sharp knife and break them once cooled.
