Chicken Pulao is a basmati delight like biryani but has a mild flavour with Indian spices.Unlike Biryani ,Pulao is a bit lighter with a bit less spice and super quick to make for a meal.
This chicken pulao can be easily prepared at home with easily available ingredients.Its a one pot rice dish which i’ve prepared using an electric rice cooker.There are so many methods of making Chicken pulao and i make them with chicken stock for more taste and flavour.
A very simple pulao recipe that you could make even for a large crowd.This chicken pulao can be served with chicken gravy, egg or curry or enjoy it with just raitha.

2 cups basmati rice
2 onions thinly sliced
5 green chillies slit
2 star anise
2 bay leaf
1 tsp fennel seeds
2 tsp ginger garlic paste
1 tsp garam masala powder
2 cups water for chicken stock
1 tbsp chopped mint leaves
1 tbsp chopped coriander leaves
2 tbsp ghee or oil
1/2 tsp turmeric powder
1 cup water
Salt to taste
Clean and wash the chicken.
Soak the basmati rice in water fir 20 -30 mins.Strain the water and keep it aside .
In a pressure add the chicken pieces with 2 cups water,salt ,turmeric powder and cook for 3 whistles.
Heat oil or ghee in a kadai,add cloves,cardamoms,star anise,bay leaf ,cinnamon ,cashews and saute for 2 mins on low flame.
Then add onions,green chillies ,ginger garlic paste and ssute for 2 more mins on low flame.
Transfer this to an electric cooker,add chicken ,chicken pieces,mint leaves, coriander leaves,garam masala powder,salt and switch on the cooking mode.
Let it set for 30 mins after cooking.
Serve them with your favourite side dish or just raitha.
