Palkova is a popular milk based delicacy from Srivilliputhur made with just 2 ingredients.This is the traditional way of making Palkova,it is bit time consuming but worth trying.
Milk is boiled and evaporated in a heavy bottomed vessel until it is reduced to half its quantity and then sugar is added for taste ,you can also add Kedar or cardamom for flavour.
Making Palkova in huge batches using this method takes lot of time and energy.So try with just 1 litre of full fat milk if you are a beginner.
PREPARATION TIME : 5 MINS
MAKING TIME : 1 HOUR
SERVES : 4
1 litre full cream milk
1/4 cup sugar
1 tsp GHEE(optional)
Boil milk in a heavy bottomed vessel on low flame.
Stir occasionally and maintain low flame.
The milk starts to thicken now .
In 30 mins the milk would turn thick and creamy.
After 45 mins,add sugar and ghee and keep stirring.
Switch off the flame and transfer it to a bowl immediately.
Rich and creamy Palkova.
