
A rich Indian sweet with soft, fudge like texture made with badam ,ghee, sugar,milk and saffron that is so perfect for special occasions and celebrations at home.You can easily make them in huge batches for gathering with family or friends.
This traditional method of making Badam Halwa is time consuming and needs lot of patience.Badam needs to be soaked in hot water for an hour for blanching.Use good quality saffron for natural colour and flavour.
Grind the almonds coarsely using milk to granular consistency.If you prefer gooey texture then grind the almonds to fine smooth paste.
The cooking time takes 30-40 mins,you need to keep stirring the Halwa continuously to avoid getting burnt at the bottom.

INGREDIENTS
1 cup Badam (almonds)
1 cup sugar
1/2 cup milk
1/4 tsp saffron
100 g ghee
METHOD
Soak the almonds in hot water for an hour and remove the skin .
Grind it to coarse paste with 1/4 cup milk.
Transfer it to a non stick pan, add another 1/4 cup milk , sugar,saffron and cook on medium flame.
The halwa first turns watery ,keep the flame on medium and stir continuously.Keep adding ghee(1 tbsp) at regular intervals .
The halwa starts to turn thick now.
Halwa starts to leave the sides, add the remaining ghee and switch off the flame .
