Raw Jackfruit Briyani tastes so much like mutton briyani because of its soft meaty texture,it is also known as vegetarian meat and a perfect substitute for non veg dishes.So many curries and gravies are made using tender raw jackfruit,fully ripe are used in making jams and kheers.Even the seeds of jackfruit is edible which is added to sambar and poriyal dishes.
The chunks of tender jackfruit can also be deep fried with masala marination and added to the briyani,but i have pressure cooked them in this recipe.Do try this spicy briyani that is so delicious and flavourful.

3/4 cup tender jackfruit chunks
1 cup basmati rice(soak for 10 mins in water)
1 onion (thinly sliced)
1 tomato (thinly sliced)
1 tbsp coriander leaves (chopped)
1 tbsp mint leaves (chopped)
1/4 cup curd
3/4 tsp chilli powder
1/2 tsp turmeric powder
2 star anise
1/4 tsp fennel seeds
1 bay leaf
1 1/2 cup water
3 tbsp oil
A pinch of orange food color(optional)
Salt to taste
7 cloves garlic
2 inch ginger
1/2 tsp fennel seeds
1 green chilly

Cut the jackfruit into halves,remove the hard outer green colored skin part and also the center stalk part.
Cut them into 2 inch sized chunks and immediately immerse in salt water to prevent them from changing to brown color.Then pressure cook them with 1/2 tsp turmeric powder and salt for 2 whistles
Heat oil in a pan,add cinnamon,cloves,cardamom,bay leaf,fennel seeds and saute for 2 mins in low flame.Then add onions and saute for 3 mins in medium flame.Now add tomatoes saute for 3 mins in medium flame.
Grind the items under to grind column and add to the sauteed mixture.Then add a tbsp of curd,1/4 tsp chilly powder,cooked tender jackfruit chunks and close it with a lid.Let it cook for 5 min in low flame.
Now add the remaining curd,water,chilly powder,salt,mint leaves,coriander leaves and let it boil.
Mix lime juice with orange food color(optional).Soak basmati rice in water for 10 mins.Add the basmati rice and bring it to boil.
Let it cook in high flame until rice is seen slightly at the top.Then reduce the flame to low and close it with a lid.Cook for 5 mins.Add the lime juice over the cooked rice.Heat a dosa tawa in high flame and transfer the briyani pot to the tawa and let it stay in dum mode for 5 mins.
Spicy Tender Jackfruit Biryani is ready to serve now.
