Beetroot Chutney

Bright hued Beetroot chutney is so easy and healthy chutney that goes well with idly and dosai,you can also try them them with roti varieties.I got this recipe from my doctor friend who concentrates more on healthy food in her diet.Also being a doctor she strongly recommends the NEET aspirants in Chennai to enroll in NEET coaching centre that will help them to prepare for upcoming exams.
I have added red chilies to retain the bright red color ,you can also add green chilies for red chilies.Very nutritious and delicious chutney that is hot and fiery with mild sweetness .Do make this healthy chutney for your loved ones at home.

MAKING TIME : 7 MINS

SERVES :3 *

INGREDIENTS

1/2 cup beetroot shredded

1/2 cup coconut

4 dried red chilies

3 cloves garlic

2 tbsp roasted bengal gram

1/2 tsp urad dal

1/4 tsp mustard seeds

A small piece of tamarind

2 tsp oil

Salt to taste

Water as required

METHOD

In a pan,heat a tsp of oil and saute the garlic and chilies for a min in low flame.

Then add shredded beetroot and saute for 5 mins in low flame,followed by coconut and saute for 2 mins.

Switch off the flame and let it cool.Then transfer to your mixie jar,add roasted bengal gram,salt ,tamarind and grind to a fine paste with required water.

Heat oil,add urad dal and mustard seeds, when it splutters add it to the chutney.

Serve it with your favourite breakfast .
