Pori Urundai ia a traditional recipe prepared especially on Karthigai Deepam for nivedhyam.These festivals help us to know more about our customs and traditions.During Thirukarthigai deepam,people decorate their houses with beautiful agals and kolams .As it comes soon after Diwali,many used to reserve few crackers for this special day.
There are so many traditional recipes made on this auspicious occasion like Nei Appam, Nel Pori Urundai and Adai.Today I have shared Pori Urundai recipe with puffed rice. Very easy and healthy sweet recipe without the addition of white sugar and oil.Jaggery is used as sweetening agent ,so we need not worry about the empty calories.Do make this healthy ,guilt free balls at home and enjoy your day with your family.

INGREDIENTS
5 cups pori / puffed rice
1 cup jaggery (crushed)
1/2 tsp cardamom powder
1/4 tsp sukku powder
Ghee for greasing
METHOD
Bring a cup of jaggery with 1/4 cup water to boil.Filter it once it gets dissloved.
Bring it to boil again in medium flame ,add the sukku powder and cardamom powder.
Let it boil in medium flame until it becomes thick.
Check the consistency by dropping the syrup in water.When it reaches a soft ball consistency, switch off the flame.
Now add the pori little by lttle and mix well with jaggery syrup.
Grease your hands with ghee or rice flour and start making balls out of it.Make balls gently ,you need not give so much pressure to make them.
Crispy Pori Urundais are ready now.Let it cool completely and store it in an airtight container.
Use only crispy pori from the market.
You can also add few coconut pieces or roasted gram to it.
Use pori and jaggery in the ratio 5:1.That is for 5 cups pori use 1 cup jaggery.

Thank you Jess Carey…Jaggery comes from palm tree sap or sugar cane juice.It is unrefined sweetening substance which is less sweeter than maple syrup with brown sugar flavor…
