Sabudana Vadai is a popular deep fried snack from Maharastra made using tapioca pearls.Very filling and nutritious snack prepared especially during Navaratri fasting(Vrat)Such a flavorful vadai vadai that is so crispy from outside and soft from inside.Make sure to soak them at least 5 hours or overnight that makes the sabudana really soft.
These vadais tend to absorb more oil sometimes they even burst while frying.To avoid this drain the water completely from the sabudana (javarisi) and make the vadai dough firm and solid.You can serve them with sweet curd or just ketchup.

INGREDIENTS
3/4 cup sabudana/ javarisi
2 medium sized potato(pressure cook and keep it aside)
1/2 cup roasted groundnut
1 green chilly
2 tbsp finely chopped coriander leaves
1/2 tsp cumin seeds
1/4 tsp garam masala powder
1 tsp red chilly powder
1/2 tsp grated ginger
1 tsp lemon juice
Water as required
Oil for frying.
Salt to taste
METHOD
Roast the peanuts,remove the husk and grind them coarsely.
Soak sabudana in large mixing bowl with 2 cups water overnight.Strain the excess water completely and keep it aside.
In a large mixing bowl add sabudana,potatoes,powdered ground and some salt.Add this mixture to the remaining ingredients like green chilly,coriander leaves,lemon juice,red chilly powder ,garam masala powder and cumin seeds.Make a dough with these ingredients
Then make small flattened patties out of this dough.Deep fry until golden brown.Remove the excess oil using a kitchen paper.
Serve this Maharastrian snack as an evening TEA time snack.
