Sabudana Vada / Javarisi Vadai

Sabudana Vadai is a popular deep fried snack from Maharastra made using tapioca pearls.Very filling and nutritious snack prepared especially during Navaratri fasting(Vrat)Such a flavorful vadai vadai that is so crispy from outside and soft from inside.Make sure to soak them at least 5 hours or overnight that makes the sabudana really soft.
These vadais tend to absorb more oil sometimes they even burst while frying. To avoid this drain the water completely from the sabudana (javarisi) and make the vadai dough firm and solid. You can serve them with sweet curd or just ketchup.
