Adhirasam Recipe

Adhirasam ,a popular traditional sweet prepared by Tamilians especially for Diwali. Very easy to make sweet at home with just 2 main ingredients ,even beginners should give it a try.Only thing we need to take care of the jaggery consistency (vellam paagu).And we should not get tempted to increase the flame while deep frying the sweet for cooking in medium or high flame make them burnt outside and uncooked inside.Use ponni pacharisi to yield perfect Adhirasams.Do try this sweet at home this Diwali and have a fun filled celebrations with your loved ones.

SOAKING TIME : 3 HOURS

DRYING TIME : 10 MINS

RESTING TIME : 2-3 DAYS

INGREDIENTS:

1 raw rice

3/4 cup jaggery

1/4 tsp cardamom

1/4 tsp dry ginger powder

2 tsp GHEE

Oil for deep frying

METHOD

Soak the rice in water for 3 hours.Drain the water and let it dry for 10 mins.Then grind it to fine powder when they are still wet.

Bring jaggery and water to boil.When it starts to boil ,reduce the flame to low and cook until a slimy consistency is obtained.Keep checking by dropping them in water.

Add dry ginger powder,cardamom powder and the ground rice flour.The dough would be little water but gets tight during resting period.

Grease the bowl,add the dough and apply ghee over them so that they don’t get dried over the surface.Close it with a lid and let it rest for 2 days.

The dough is all set to make adhirasam now.

Take a polythene sheet or banana leaf,grease them with ghee and place a small ball shaped dough and flatten it gently.

Deep fry in oil in low flame.

Squeeze the excess oil by pressing them between two ladles.

Drain them using kitchen paper.See how beautifully they are cooked inside.

Delicious Adirasam is ready to serve now.
